CHIPOTLE BACON & CHEESE MEATLOAF
Meatloaf

Chipotle Ketchup

| | Potatoes, 40 ct., sliced into 5 slices lengthwise and then cut in half

| | Boston lettuce, outer leaves, for garnish

| | Red onions, cut into 1" rings, for garnish

Method
| 1 |  | Preheat oven to 375°F. |

| 2 |  | For Meatloaf, in a large mixing bowl, add all meatloaf ingredients together and mix well with hands. Make sure all ingredients are well incorporated. |

| 3 |  | On a greased sheet pan, mold meatloaf into 2 loaves (5" wide x 15" long x 2" high). Bake at 375°F for 10 minutes. |

| 4 |  | For Chipotle Ketchup, mix ingredients. |

| 5 |  | Remove meatloaf from oven and glaze with 1/3 of Chipotle Ketchup mix. |

| 6 |  | Place back in oven and bake for another 10 minutes. Remove from oven again and glaze with 1/3 more of the Chipotle Ketchup mix. |

| 7 |  | Turn oven up to 400°F. Return meatloaf to oven and bake 10 more minutes. |

| 8 |  | Remove from oven and let rest for 5 minutes. |

| 9 |  | Fry potatoes in deep fryer at 375°F until golden brown. |

| 10 |  | Toast bread until golden. |

| 11 |  | Slice meatloaf into 3 oz. portions and place 2 on each plate. Plate fries and Texas toast. Use remaining Chipotle Ketchup as dip for the fries. |

| 11 |  | Garnish with lettuce and red onions and serve. |
