SMOKY SANTIAGO WRAP

 Ingredients Weight Measure
      
 Bacon, cooked, crumbled
2-1/2 oz.
1/2 cup
 Country ham, cooked, diced
12 oz.
3 cups
 Original TABASCO® brand Pepper Sauce
2 oz.
4 Tbsp.
 Eggs, beaten
24 oz.
12 ea.
 Flour tortillas

12 ea.
 Monterey Jack cheese, grated
6 oz.
1 cup

Method

1Sauté the bacon, ham and Original TABASCO® Pepper Sauce. Hold warm.
2For each serving, ladle 2 oz. of the egg into a nonstick omelet pan and cook the egg omelet style until it sets.
3Place the omelet on a flour tortilla. Place 1-1/2 oz. ham and bacon mixture and 1/2 oz. cheese down the center of the omelet. Roll the omelet into the tortilla, burrito style.
